this is one of the best things i have ever created.  okay…so you have some people over, serve them hors d’oeuvres or even dinner.  chances are come morning time you have a few of the following things laying around … bread on the verge of going stale, fancy cheese, and a bunch of veggies. 

when i find myself in this position…i look around at the food and realize…time to make an egg bake!  egg bake is like a savory bread pudding done kitchen sink style.  to make an egg bake for 2, follow the directions below.  for a crowd, just make more.  also, vary the ingredients based on what is lying around.  it’s pretty hard to mess up.  great for an after party breakfast or for a day-after dinner with a simply salad.

—about 1/4 baguette or similar bread, cut in to cubes

—veggies (broccoli, bell peppers, etc etc)

—about 3 oz cheese (any kind is fine, okay to mix)

—6 eggs

—about 1/2 cup milk

—anything else you have around that sounds good, chopped up (olives, prosciutto, fresh herbs)

preheat oven to 375.  spray a small baking pan or loaf pan with cooking spray.  lightly saute the veggies over medium heat.  in a bowl, beat eggs and milk together with a whisk, adding salt and pepper to taste.  mix veggies, bread, and 2/3 of the cheese together (along with any chopped up add ins).  distribute in baking pan, pressing down a little bit.  pour egg mixture over everything.  sprinkle remaining cheese on top.  bake for about 15-20 min (until set).  slice and serve! -k
